Endive Arugula Microgreens Salad
This recipe blends together the strongest flavors of the leafy greens world to make one memorable salad.
Our Champagne Vinaigrette knows how to bring out the best flavors without overpowering them. For this salad, we lay out an impressive bed of arugula, microgreens, and endives and add creamy avocado, green onion, and some bleu cheese for a combination of flavors that work beautifully together.
Separate Endive leaves. Start by trimming of the bottom half to easily pull apart
In a large bowl, layer the endive leaves, arugula, and microgreens
Chop and sprinkle green onions
Dice avocado and spoon on to salad
Crumble bleu cheese on top of salad and desired amount of hemp hearts
Drizzle with Champagne Vinaigrette. Toss and enjoy!
