Roasted Rainbow Carrot Bowls

We don't just eat salad because it’s good for us, we eat it cause we LOVE it! And every great salad needs a great salad dressing!
Melanie complimented her kale and roasted rainbow carrot bowls with our Sesame Tahini dressing. Because, in case you didn't know, carrots and tahini are besties.
1 bunch of carrots
1 brunch of Kale
1c of cooked quinoa
2 Chopped cucumbers
Pinch of sesame seeds
1 tbsp Sesame Tahini Dressing
Slice carrots, coat with olive oil, Herb de Provence and roast at 400 for 45min
Chop Kale and massage using limes and olive oil
Cook 1c of quinoa
Chop and dice cucumbers
Add all the ingredients together in a big bowl and drizzle with Sesame Tahini dressing
