Carrots have always been a gem in the snack world - whether straight up, or for dipping in hummus or Boursin (yum!). Whether eaten raw, steamed, boiled or baked, these vegetables help control blood sugar levels and strengthen bones (even if they don't help your eyesight, like our mothers said).
The newest culinary discovery transforms these veggies into an unusual and shockingly tasty snack. Ready for it? I offer you CARROT BACON!
Carrot bacon offers a plant-based option that is still delicious, familiar, and fun!
Directions
preheat the oven to 400 degrees
use a pealer or mandoline to slice the carrots longwise into thin slivers
marinade the slices of carrot in the Champagne Vinaigrette for at least 15 minutes.
option to add 1 tsp smoked paprika or liquid smoke if desiring a smokier snack
lay the slices on a baking sheet with parchment paper
bake for 7 minutes
flip the slices and bake for an additional 5-10 minutes. Watch throughout to keep the bacon from burning.
