Corn is the star of this salad, not just a mix in! When combined with tomato and peach wedges, your bowl looks like a warm summer sunset! For the purest, who can’t live without some greens in their salad, we recommend a mild butter lettuce or for an extra bite, a sprinkle of arugula.

- Arugula
- Corn
- Peach
- Tomato
- Feta cheese
- Dress It Up Dressing Champagne Vinaigrette
Directions
Prep
If you're using fresh corn from the cob, dehusk the corn and cut off the kernels
Cut thin wedges of tomato and dice peach
Assemble
Transfer corn to bowl; add tomato wedges and diced peaches
Garnish with arugula and feta cheese; drizzle Champagne Vinaigrette
