Mediterranean Pasta Salad
It has been a while since we made a Pasta Salad. The varieties are endless and we’re not complaining. For this edition we added some Mediterranean flavors to celebrate pasta’s roots.
This salad begins with kalamatas olives; the salty flavor adds so much! While the olives may be the centerpiece of this pasta, we mixed in shaved brussels sprouts, cucumber, red onion, avocado, peppadews peppers, bell pepper, cherry tomatoes, and feta cheese.
We finished the dish with the ultimate accessory, our Champagne Vinaigrette for the perfect accent to let the veggies shine.
1 box of Rotini Pasta
1 cup of cherry tomatoes
1/2 cup of shaved Brussels
1 large cucumber
1/2 red onion
1/3 cup of crumbled feta
1 bell pepper
1/3 cup olives
4 tbsp of Champagne Vinaigrette
Cook pasta in large pot
Chop cucumber, peppers, tomatoes, and olives in thin slices
Mix in to pasta
Dice avocado and spoon on pasta
Drizzle with Champagne Vinaigrette
