A truly unique fruit dressing, the Blackberry Vinaigrette is made with only four ingredients, and while milder than our other vinaigrettes, it offers a complexity of flavors that complement everything from a cheese plate, to pork, to peaches and cream. Because of this, we call it the shape shifter.

I launched Dress It Up Dressing with four vinaigrettes one of which was a Chocolate Vinaigrette made with a dreamy Italian chocolate balsamic vinegar. It was amazing, but it seemed the world wasn’t yet ready for a chocolate vinaigrette, and it didn’t sell: children were disappointed it didn't taste like chocolate ice cream and adults didn't think chocolate and salad belonged together. So, I needed to find a replacement. It made sense to add a fruit dressing to the lineup, but I’d never really been a fan of fruit dressings – I found them too syrupy sweet, and that’s just not to my liking, so it needed to be different. At a local olive oil and vinegar shop, I found the most amazing Blackberry Vinegar: it wasn’t sweet and was far richer and smokier than a typical vinegar. I started playing with it, and one by one, eliminated everything in the dressing apart from the vinegar, olive oil, garlic, and sea salt.

Four ingredients only! But don’t be fooled - the complexity of the flavors and the rich earthy aroma belie its simplicity and make it unlike any other fruit dressing out there.
