This winter salad is a wonderful addition to any holiday meal. Our Red Wine Vinaigrette clings to the fresh leafy greens and enriches the creamy goat cheese and avocado. The crisp apples and candied pecans create that perfect crunch and will have everyone requesting a second helping.
Ingredients

2 tbsp balsamic vinegar

1/4 coconut sugar

1/2 c pecans
-
big bowl of mixed leafy greens

1/4 medium red onion
-
1 medium apple sliced
-
1 avocado sliced
-
dried canberries
-
candied pecans
-
1/4 c goat cheese
-
2 tbsp Red Wine Vinaigrette

Salad
Directions
Bring the balsamic vinegar to a boil
Lower the heat and mixed in the coconut sugar
Stir and let cook for 3 minutes
Turn the heat down and mix in the pecans
Spread the pecans on a baking sheet lined with alumnion foil
Bake for 10 minutes
Add the salad ingredients together and top with apples, avocado, and pecans
Drizzle with Red Wine Vinaigrette
