@Veganvida created an inspired classic, but vegan, niçoise salad by dropping the egg and adding a simple white bean marinade in place of the tuna.
This Mediterranean dish hails from Nice, on the French Riviera and it’s just right for a large dinner party or a holiday feast! What's even better, is the ingredients can be prepped in advance so there is one less thing to complete day of.
Ingredients
White Bean Salad

1 can small white beans
-
2 tbsp of olive oil
-
1 tsp vinegar
-
1 small garlic clove
-
1 chopped garlic scapes or use another clove of garlic
-
salt and Pepper
-
lemon squeeze
Other Salad Items
Directions
Pan roast potatoes with salt and pepper
Combine olive oil, vinegar, garlic, lemon, and salt and pepper for the white bean salad
Pour dressing over the can of white beans in a small bowl and toss
Combine other salad items on a plate with the white bean salad and drizzle with Champagne Vinaigrette
