This means weekday meals need to be QUICK! But that shouldn’t mean sacrificing nutrition or taste. After all, that would be antithetical to the line of work we’re in! And it's hard to beat the classic soup and salad combo for an easy, healthy & delicious lunch 😋
This plant-powered lunch is on repeat these days because it takes minutes to prep! Start with a ready to heat and eat Nona Lim Tomato Basil Soup cup & then “Dress It Up” by adding chopped parsley or basil, and topping with a dollop of coconut cream and handful of homemade croutons. 🍅
Pair with a simple arugula salad and our Red Wine Vinaigrette.

1 cup of Nona Lim Tomato Thai Basil Soup

Sprinkle of parsley

Dollop of coconut cream

Handful of homemade croutons

2 cups of arugula

1/2 carrot - sliced

1 radish - julienned

Handful of peppadews

Handful of cherry tomatoes

1 tbsp of Red Wine Vinaigrette

Directions
Slice available bread and sauté with a little olive oil, salt, and pepper, until crisp
Heat up the Tomato Soup according to the directions on the package
Add a dollop of coconut cream and a sprinkle of parsley for garnish
In a bowl add in the arugula, the slivered carrots, julienned radish, halved cherry tomatoes, and top with peppadews
Drizzle salad with the Red Wine Vinaigrette and enjoy this easy, delicious meal
