Peaches and Cream
One of the best things about summer is the abundance of fresh fruits ripened right on the tree or vine. And who can think of summer (or fruit) without immediately thinking of peaches.
Have you ever tried grilling your peaches? What a way to combine two summer legends – peaches and grilling! You picking up what I’m putting down? The grill transforms the flavor of the peaches into a rich, smokey, caramelized confection. Alone (or with ice cream) this can be an excellent treat.
We made our own rendition of peaches and cream by adding ribboned mint and a light drizzle of our Blackberry vinaigrette to cut the sweetness and round it out for an absolute knockout.
Half the peaches and take out the seed
Grill face down until they are lightly chard
Add a scoop of vanilla ice-cream into the center of the peach
Drizzle with the Blackberry Vinaigrette
Ribbon cut some fresh mint and add a light sprinkle on top of the peach
