Loving Radicchio Salad

We had so much fun making this Valentine's Day inspired salad. It is like a flower bouquet in a bowl that is packed with fresh and vibrant produce and will leave you feeling loved.
While we have always been big fans of pomegranates and the health benefits they offer, we recently learned that antioxidants are a good thing in life and in the bedroom!

Ingredients

1 pomegranate

3 purple carrots

1 head of radicchio

1 grapefruit

1 watermelon radish

3 medium sized radish

2 tbsp of our blackberry vinaigrette
Directions
Core and cut the radicchio. Set it aside after rinsing well.
Seed the pomegranate. Start by slicing off the top and then cut along the pithy. This seems to create segments that you can then pop out.
Peel and slice your grapefruit.
Slice both types of your radishes and carrots thinly, or pass them through the slicer of a food processor
Assemble the radicchio in a large bowl. Add your pomegranate seeds, sliced grapefruit, shaved watermelon radish, carrots, and radish to the top.
Drizzle with blackberry vinaigrette and serve!
