Green Goddess Salad

The backbone of this recipe is the beautifully green and creamy dressing. Using our Champagne Vinaigrette as the base it is healthy and nutritious, but not too heavy.
The dressing is quick, easy, and incredibly versatile. It takes just minutes to whip up and can be served on a side salad, with chips and a cabbage slaw, or as a filling for sandwiches and wraps.
We layered the dressing on a mix of leafy greens creating a bright, super crunchy salad that is vibrant and refreshing. But you can mix and match all you want!
1 cup of basil leaves
½ cup of dill
¼ cup of soaked cashews
½ cup of parsley
¼ cup of chives
1 Persian cucumber
¼ cup of Champagne Vinaigrette
½ an avocado
¼ cup of greek yogurt
1 lemon juiced
Soak cashews in hot water for 1-2 hours or overnight in room temperature water
Add all of the liquid salad dressing ingredients to a blender (Champagne Vinaigrette and lemon juice). Add the rest of the dressing ingredients to the same blender.
Blend until your dressing is a thick, pourable consistency.
Pour the dressing over the salad ingredients.
Mix well and enjoy!
