Chopped Kale and Mandarin Orange Salad

Spring is almost here, but until then this salad is just what your recipe rotation needs! We’re getting creative with winter produce and you’re going to be so happy you tried out the flavor combos in this not so typical kale salad. 

 

This recipe plays with sweet and tart flavors to Dress Up earthy greens. The baby kale paired with sweet mandarin, sour pickled onion, chewy cranberries, and crisp apples create a hit of vibrancy that will wake up your taste buds! 

 

The Red Wine Vinaigrette is the perfect flavor here because it’s bold enough to soften the baby kale and yet stands apart from all of the other strong flavors in dish. 

 

If you’re looking for a standout salad that is anything but ordinary, this is the one for you!

1 bunch Kale, finely chopped
About 4 Ripe Mandarin Oranges, peeled, cubed
1 Avocado, cubed
3 tbsp
DRESS IT UP DRESSING Apple Cider Vinaigrette

 

Put in a bowl and mix 

I like to let this sit in the fridge, or on the counter and “marinate” for a little while before serving. It gives the flavors a chance to permeate and softens the kale.

 The sweetness of the oranges cuts any potential bitterness in the kale.
Adding a ripe avocado adds just the right amount of gooeyness (although sometimes a bit too much, so don’t use the ripest of the ripe).
