This raw crudité salad is perfect for a warm Spring day. The fresh, uncooked vegetables leave you feeling light and refreshed, while the combination of creamy Caesar and avocado chunks satisfy your craving for a little indulgence.
|Carrots, peeled and cut into chunks
|Cucumber, peeled, thickly sliced, and quartered
|Bell pepper, we used Striped Holland pepper
|Radishes (of your choice), cut into quarters
|Avocado, peeled and cut into chunks
Prepare your vegetables by washing and cutting into thick pieces. Our recommendation is to do equal parts of each vegetable (roughly 1/3 cup). Toss the vegetables together with avocado chunks and 2 spoonfuls of our Caesar dressing. Best served chilled.
