Looking for a hardy and filling, but refreshing salad? This broccoli gribiche will satisfy all of your cravings. The creamy dressing mimics an egg salad while being packed with extra nutrients that will leave you full and energized. The tender broccoli and crispy potatoes coated in fresh herbs provide that refreshing flavor.
“Gribiche” is a traditional French sauce, containing cooked eggs, mustard, chopped pickles, capers and herbs. Similar to a potato salad minus the mayo! We decided to Dress It Up by using our Red Wine Vinaigrette, along with herbs and extra olive oil. The Red Wine Vinaigrette adds the balsamic and red wine vinegar flavor, along with garlic and dijon mustard.
You can enjoy this recipe at any time of the day - hot or cold!

Ingredients
- 1.5 lbs of fingerling potatoes
- 1 lb broccoli
- ¼ cup olive oil
- 4 tbsp Red Wine Vinaigrette
- Fresh chives
- Fresh parsley
- Fresh tarragon
- 2 small shallots
- 4 hard boiled eggs
Directions
Pre-heat oven to 400F
Lightly oil and salt the broccoli and halved potatoes.
Roast the broccoli for 20 minutes and halved fingerling potatoes for 30 minutes.
While the vegetables roast, prepare the sauce. Combine 1 mashed hard boiled egg yolk, ¼ cup of olive oil, and add 4 tbsp of Dress it Up Dressing’s Red Wine Vinaigrette.
Add a hand full of fresh chives & parsley, 1 tbsp fresh tarragon, and 2 small shallots minced.
Chop three hard boiled eggs and the remaining white of the fourth egg, then fold into the sauce.
Combine with the roasted broccoli and potatoes. Season with salt and pepper.
