Blackened Salmon and Kale Caesar Salad

If you’re looking for a simple dinner that feels light and healthy, but still keeps you full, then look no further! Our Caesar Dressing creates a creamy indulgence, without loading up your salad with empty calories.  

 

1 bunch Lacinato kale, rinsed, trimmed and chopped
2 Salmon fillets (6-ounce)
About 2 tsp Blackened seasoning (combined from all the spices for the two fillets: salt, pepper, garlic powder, paprika, coriander, red pepper flakes)
¼ cup Panko breadcrumbs
½ tsp. Garlic powder
To taste Extra Virgin Olive Oil (EVOO)
Butter
To taste

For the kale and salmon:

Massage kale with a drizzle of olive oil and salt. Set aside while you cook the salmon.
Season the salmon liberally with your blackened seasoning. Grill over high heat and flip, cooking until desired doneness. I usually sear on one side for 2-3 minutes, then flip for another 2-3 minutes and finish off in a 425 degree oven for another 5-8 minutes, as I like salmon medium-well.
For the breadcrumbs:
Over medium heat, add 1 tbsp. of butter to a small pan. In a small bowl, mix your garlic powder and breadcrumbs. Add to the butter once it’s melted, stirring constantly for a few minutes until the breadcrumbs turn golden. Be careful not to burn. (This should only take a few minutes)
Now assemble your salad! Add your kale to a bowl, top with Caesar dressing, mix to combine. Add your fish on top and finish with a sprinkling of toasted garlic breadcrumbs. Enjoy!
