Let's get creative with our coleslaw this summer, shall we? 


This is a great dish to keep in the fridge to be served by itself, or added to a wrap on hot summer day. It’s refreshing and light, and the Apple Cider vinaigrette combines perfectly with the brussels sprouts, cabbage and apple topping.


Paired with an extra cheesy quesadilla, this dish is super easy and delicious for everyone!

Ingredients

  • 1/2 apple

  • 1/2 a head of purple cabbage

  • 15 brussels sprouts

  • 1 red onion

  • 4 tbsp of Apple Cider Vinaigrette

Directions

  1. Chop cabbage and brussels sprouts; dice red onion and slice apple into matchsticks

  2. In a medium bowl, combine the cabbage, brussels sprouts, and red onion; drizzle with Apple Cider Vinaigrette and toss.

  3. In a medium sauce pan, drizzle olive oil over medium heat.

  4. Place a tortilla in the oil, add a generous layer of cheese and place another tortilla on top; once the bottom side is cooked, flip.

  5. Plate your quesadilla and coleslaw and top the slaw with apple matchsticks.

  6. Serve and enjoy!

This coleslaw is dressed to impress, with its colorful medley of crunchy veggies, sweet apples, and zesty dressing that will have your taste buds dancing all summer long!
