1/2 a head of purple cabbage
15 brussels sprouts
1 red onion
4 tbsp of Apple Cider Vinaigrette
Chop cabbage and brussels sprouts; dice red onion and slice apple into matchsticks
In a medium bowl, combine the cabbage, brussels sprouts, and red onion; drizzle with Apple Cider Vinaigrette and toss.
In a medium sauce pan, drizzle olive oil over medium heat.
Place a tortilla in the oil, add a generous layer of cheese and place another tortilla on top; once the bottom side is cooked, flip.
Plate your quesadilla and coleslaw and top the slaw with apple matchsticks.
Serve and enjoy!
