While we typically stay close to the classics, we felt Caesar needed to be updated away from the heavy, calorie laden standard and toward a healthy alternative. Our specially formulated vegetarian Caesar replaces anchovies with chia seeds and still delivers the same creaminess and flavor as the original.

Olive Oil, Water, White Balsamic Vinegar, Dijon Mustard, Lemon Juice, Chia Seeds, Tamari, Parmesan Cheese, Garlic. Contains: milk and soy

Even though vinaigrettes were what I knew, I wanted to take the idea behind them - using real ingredients to create classic flavors – and go beyond vinaigrettes. I started getting creative and playing around with different ways to make Caesar without the cream, eggs, or mayo.

While working on the recipe, one day I had chia seeds out for a totally unrelated dish and noticed there was a slight fishy smell to the seeds. Bingo! I could use chia to achieve a chia pudding creaminess while adding a hint of anchovy-like flavor too. Vegetarians rejoice!

Combining classic flavors with the upgrades of olive oil, fresh garlic, plus a little bit of innovation is our contribution to the salad dressing aisle. But I have to apologize to the vegans: while I tried to make this without dairy, this Caesar needed real parmesan. In fact, I typically add even more on the day.
