There's something so appealing to the idea that Jennifer Aniston apparently ate the same salad every day on the set of Friends. If it's right, it's right, right?
We wanted to give her salad a try, and naturally, we had to Dress It Up.
The hype was real. It was a full-frontal taste bud assault. Added bonus, it's perfect for meal prep.
Ingredients

2 cups Bulgur wheat

1 cup diced cucumber

1/2 red onion

1/2 cup parsley

1/4 cup fresh mint

1/2 cup feta
-
1 can garbanzo (15oz)

1/4 cup pistachios

3 tbsp Apple Cider Vinaigrette
Directions
Cook the bulgur until light and fluffy like rice, or according to the directions on the package, then let cool.
Finely chop the cucumber, red onion, parsley, and fresh mint, and add to a large salad bowl.
Drain and add a can of garbanzo beans, along with the cooked bulgur and chopped pistachios.
Crumble the feta over the salad, drizzle the Apple Cider Vinaigrette and toss to combine.
