Cool off on a hot summer day with this delicious dish! We swapped noodles for spiralized cucumbers creating the most cool, crunchy, and refreshing recipe.
This salad gives off pasta vibes and will have you feeling like you’re indulging in a tasty bowl of glass noodles. Bursting with sweet, tangy, creamy flavor, this healthy, and low carb salad takes only ten minutes to throw together!
Ingredients

1 large cucumber

¼ red onion

½ apple
-
4 brussels sprouts

1/2 cup of greek yogurt

2 tbsp of Apple Cider Vinaigrette
Directions
Skin cucumber and use a Julienne peeler to create spirals; blot spirals dry with paper towel
Slice red onion and apple; chop sliced apple into finer pieces
Shave brussels sprouts
Mix greek yogurt and Apple Cider Vinaigrette dressing
Plate spiraled cucumbers, onions, apples and add mayo/ACV mix; toss and top with brussels sprouts
