Rainbow Roasted Potatoes
Calling all potato lovers! Crispy edges on the outside, creamy and fluffy on the inside, roasted potatoes are an easy side dish that goes with pretty much any meal!
Picking the right potatoes is key to getting that golden crunch. You want something right in the middle of the waxy-starchy spectrum, like Yukon Gold, fingerlings, and baby purple potatoes to add that bright, bold element.
Toss the Caesar dressing atop the potatoes to finish the dish. Pair them with a juicy steak, or indulge in just a plate of potatoes, bottom line, you can’t go wrong with these roasted potatoes. Serve them up!
5 yellow fingerling potatoes
5 baby purple potatoes
5 Yukon Gold potatoes
1 1/2 tbsp of olive oil
1 sprig thyme
2 tbsp of Caesar Dressing
Cut or cube potatoes to your desired shape and size
Transfer cubed potatoes to baking sheet, coat in olive oil and add thyme
Preheat oven to 425 degrees and bake for 35 minutes or until golden
Once golden, transfer potatoes to a bowl. Drizzle and toss with Caesar dressing
Serve and enjoy!
