The secret to making raw kale really tasty is to massage it, this tenderizes the kale, and breaks down its fibrous nature creating a really delicious dish.
Simpli’s Red Quinoa offers a rich and nutty taste with a hearty texture creating an incredible base to layer on. The Quinoa Kale Salad is tossed in the light and vibrant Apple Cider Vinaigrette, giving a fresh and tangy taste.
Here’s a salad that’s beautifully fresh, saves well for meals throughout the week, and pairs well with many proteins.
Ingredients

1 cup of Simpli’s Red Quinoa

1 can of corn (or two fresh cobs)

1 yellow pepper

3 stalks of celery

⅓ cup of dried cherries

½ cabbage

1 large bushel or bag of kale

¼ cup of Apple Cider Vinaigrette
Directions
Follow stovetop cooking instructions for 1 cup of Simpli Red Quinoa
De-stem the kale, chop, and massage until you feel like leaves start to loosen
Chop celery and yellow pepper
Shred the cabbage - either green or purple
Slice the corn off the cob
In a big bowl mix all the ingredients together and toss with the Apple Cider Vinaigrette
Serve fresh or keep for meal prep throughout the week
Optional: add additional apple cider vinegar for additional tang or add fresh blueberries for pops of creamy flavor
