All of the ingredients share the spotlight in this hearty detox salad as each can boast an impressive resumé of health benefits.
Crunchy cruciferous veggies like kale and cabbage make quite a team: both are known for their high level of antioxidants and for improving heart health and digestion! Alongside these veggies are a bundle of plant-based proteins — quinoa, edamame and almonds. Loaded with a variety of vitamins, antioxidants, and fiber, this trio is dressed to impress!
The combo is so delicious, the detox it offers is just an extra benefit. So is the resulting glow.
Ingredients

1 cup of kale

1/4 head of purple cabbage

1/2 cup of quinoa

1/3 cup of edamame

1/2 apple

1/3 cup of slices almonds

1 avocado

2 tbsp Apple Cider Vinaigrette
Directions
Use a small pot to cook quinoa. Always use two parts of water for one part of quinoa. For this recipe measure 1⁄2 cup quinoa and pour 1 cup of water in the pot and bring to a boil. Once boiling reduce to a simmer and cover for 10-15 minutes or until water is absorbed.
- Blend Kale and Cabbage evenly in a large bowl.
Shell edamame from pods to reach 1⁄3 cup.
Dice half an apple into small cubed chunks.
Slice one whole avocado.
Toss ingredients with Apple Cider Vinaigrette
Sprinkle sliced almonds on top and serve.
