Champagne Marinade Chicken
Grilled (or roasted) chicken, served on a bed of lettuce is a wonderfully addicting weekday dinner.
Marinating the chicken with our Champagne Vinaigrette cuts the prep and infuses a rich flavor throughout. Now, when we say marinate, we really just mean toss the chicken up and let it sit while you get everything else for serving together.
While the chicken sits, we mix up a quick bed of greens. Whatever you had available will work great.
To finish this salad off, we went with shaved parmesan cheese, sliced red onions, fresh cilantro and chives for an added herby flavor, and a last drizzle of our Champagne Vinaigrette to complement the chicken.
4 chicken breasts
4 garlic cloves
1 tbsp olive oil
1 tbsp red wine vinegar
1/2 lemon juice
1/4 cup parsley or cilantro
1 tsp salt
1 tbsp smoked paprika
1 tsp of ground cumin
1/4 tsp cayenne pepper
1/4 tsp ground cinnamon
1 inch fresh grated ginger
3 tbsp Champagne Vinaigrette
Place chicken breasts in large mixing bowl
Add in all marinade ingredients into large bowl
Roast the chicken at 400 degrees for 20-30 minutes.
Add the chicken to your favorite leafy greens
