Champagne Baked Salmon

Whole Bluehouse salmon fillet
1 red onion
Additional Veggies - we used corn, zucchini, baby potatoes, green onion
3 tbsp Champagne Vinaigrette
Optional: Drizzle of balsamic glaze
Pre-heat oven to 350 degrees
Place the piece of salmon on tinfoil or directly on a baking sheet - with the skin and all
Rub the top of the salmon with Champagne Vinaigrette
Slice red onion and additional veggies and and lay out on the pan
Drizzle with balsamic glaze if available
At 350° a large piece of salmon should take about 25 minutes to bake in the oven
